Tasting Notes
The nose is medium intensity showing smoke, herbs and some floral notes. The palate is lightly tannic and contrasted with electric acidity.
Winemaker Notes
The 2023 Dancing Bear Pinot Noir Rose is the press fraction juice from the White Pinot Noir. This extracts some levels of tannin as well as color and makes for more floral and earth drive profiles. The juice was fermented spontaneously in neutral French oak and never racked until final blending 7 months later. For the first four months batonage occurred bi-weekly to create density to balance the structure and fresh acidity.
The wine was racked and blended together and required no fining before being bottled June 2, 2024.
