Vineyard Notes
Hosmer Pinot Gris: A flat and warm site on the western side of Cayuga lake with more clay and silt loam soils being a bit further from the lake. The Pinot Gris from here tends to be generous and fruit forward with softer textures but still enough acid to keep it all balanced.
Doyle Caywood Pinot Gris: Definitely the warmest vineyard we source from. It is on the east side of Seneca Lake in what is known as the banana belt. Mostly gravelly loam and some tree shade on the Pinot Gris block help further round out the style of this block. The fruit is powerful and ripe with more stone fruit and exotic like character with medium acidity and good weight and density.
Winemaker Notes
: The 2021 Pinot Gris was destemmed and pressed cool to a stainless steel settling tank. It settled for 48 hours before being racked to neutral French oak barrels where half the wine was inoculated with cultured yeast and the other half allowed to go through spontaneous fermentation. Fermentation lasted on average 17 days with peak temperatures around 68 degrees. The wine was never racked and simply topped up post fermentation allowing batonnage bi-weekly on the gross lees for 6 months. After 9 months total the barrels were blended together, filtered and fined with bentonite for protein stability prior to bottling.
Food Pairing Notes
Pan-seared halibut with a curried cream or roasted asparagus salad with feta cheese, lemon and sumac.
