Wine Profile
Tasting Notes
An elegant and complex Blaufrankisch with silky textures and bright acidity driving the aromatics and flavors of sour cherry, raspberry, violets and clove. This is a wine that is equally at home sipping with friends and conversation or at the dinner table. It will also do well in the short term in the cellar up to 2026.
Vineyard Notes
Finger Lakes Blaufrankisch grapes sourced from Simmons Vineyard on Keuka and Doyle Vineyard.
Winemaker Notes
Destemmed but left whole berry to go into a large fermenter. The must/ferment was immediately inoculated to get fermentation started early and was pumped over twice per day, with the exception of two days that received a delestage to remove the seeds from the fermentation and have gentle cap management. Spent a total of days on the skins being pressed at dry. Post fermentation the wine was lightly pressed and racked to barrels two days later where it spent the next 8 months before being blended together and bottled.
Food Pairing Notes
Great for pairing with summer and fall grill outs. Try pairing with a simple grilled pork or chicken along side grilled seasoned vegetables.
