A vibrant Cabernet Franc rose with intense aromatics of violets, cranberry, raspberry and mint. The palate is fresh and inviting with red berry fruit, crunchy acidity and great length.
Winemaker Notes
The 2023 Dancing Bear Cabernet Franc Rose is made from direct to press Cabernet Franc meaning that there was almost no skin contact. The fruit was simply destemmed directly to the press and treated as if it was a white wine at that point.
Fermentation was cool at 61 degrees and lasted an average of 32 days. Post fermentation the wine was racked and immediately chilled to start cold stabilization and preserve the fresh fruit and acidity. The wine was filtered but no fining was necessary, including bentonite.
